Desserts | Ais Tingkap (Window Sherbet)
Penang is famous for hawkers’ food and most of us are already aware. They do not call Penang a Food Paradise for nothing. In fact, the availabilty of hawkers’ food throught the island as well as mainland area is simply abudant and we seldom have the difficulty to find good hawker food. Most of the time we only have the difficulty to choose which one to eat! Talk about being spoilt for food… hehe
Besides the delicious, mouth watering hawkers’ food, we do have snacks and desserts to compliment our meals each time. This round we have another type of creative dessert (as Tam Ciak puts it) that was actually a simple drink but with the some effort, it does look unique. Thanks for Ken, we managed to taste this unique Ais Tingkap or literal translation - Window Sherbet.

Lebuh Tamil, located just next to Chowrasta Market and opposite the previous Police Headquarters at Penang Road is this stall of Ais Tingkap. This is a one way street so most people will either stop at the road side or some will make a turning at the road before this one. The famous Penang Cendol is just at the next road

This is a sign to look out for if you are here to try the Ais Tingkap. The red coloured drink on the sign is presumably the Ais Tingkap

The boss, Almi, is one big fellow with a big smile (when you smile at him, else he does look fierce like a bouncer) is the boss managing the Ais Tingkap stall.

It looks just like a normal drinks stall and the unique dessert, Ais Tingkap has got to be their competitive advantage. How is it made? Well, we have the video but thanks to Tam Ciak the video was sideway because he was holding his camera in vertical mode! Yes, that is his hand trying to capture the process of making Ais Tingkap.
This drink is called Ais Tingkap probably because of many layers of different ingredients formed in the process. As you can see, there are at least three layers shown, with the red colour on top, pinkish white at the middle and clear colour at the bottom. One of steps involved shown here was spraying milk and creating jets of streams towards the middle layer.

Somehow before the drink was served, it was stirred thus instead of layers that we saw earlier, the glass had only one layer. Coconut meat was scooped directly from fresh coconut and put on top of the Ais Tingkap before serve

This is the final product of Ais Tingkap. From the outlook, it looked like rose syrup drink except with some additional ingredients.

Ais Tingkap ready to be consumed. Noticed that besides the coconut meat, it also included “tadpoles eggs” sago beads. Huat Koay just gave this drink a new name, “Frog eggs in rose syrup”… hahahah

This is what it looked like after we almost finished the drinks. Again, taste wise, it was just like rose syrup but with the extra ingredients, we kind of like it. You get to chew coconut meat, the tadpole sago beads, some crushed ice which was definitely better than typical rose syrup. This is something that we admire because they manage to think creatively to come out with something special out of something ordinary.

Seats are pretty much limited and most of the time, the customers will stand to enjoy the drinks.

Ais Tingkap is sold at RM1.20 per glass which is very reasonable, given the much ingredients inside the drinks itself. The stall is opens daily from 12pm till 8pm and closes on Sunday. So, if you want to try the “Frog eggs in Rose Syrup”, head on to Lebuh Tamil now!

I like sirap with biji selasih, the frog egg…but never try with extra coconut before. Have to try out one day. thanks for the info…
